It’s the holiday season, which means it’s also potluck season. We had our first small department wide potluck earlier this week, where I The General made brownies courtesy of a box mix by my friends at Ghirardelli. C’mon, someone else made li’l smokes and tortilla roll ups, so I was limited.
Now, we have a company wide one. Granted, my company’s not that big, but I’d still feel like a tool if I brought another box mix of brownies… even though they were only $2/box.
Cindi mentioned baking tonight via Twitter, and when Cindi mentions baking, I automatically think of her baking HANGOVER BARS. Although, I’m sure her baking talent reaches a bit beyond that. I made her send me the recipe tonight, just as an idea of something to make next week. Lucky for me the Holidailies’ prompted just happened to coincide with that, or else I’d be screwed with no post tonight.
They’re apparently really called Club Cracker Bars, but were dubbed Hangover Bars since they cured a post-party hangover of Matt’s. And here’s the recipe:
1/2 c. butter
1/4 c. milk
1/2 c. sugar
2/3 c. brown sugar
1 c. graham cracker crumbs
Keebler Club Crackers
1/2 c. chocolate chips
1/2 c. butterscotch chips
2/3 c. peanut butter
Bring to boil for 5 minutes the first 5 ingredients, stirring constantly in a heavy bottom pan.
Line bottom of 9 x 13 inch pan with Club crackers. Pour filling over top. Put another layer of crackers. Melt chips and peanut butter; spread it over 2nd layer of crackers. Cool 45 minutes.
